I got a text from my friend Jen last week, asking if we'd be interested in coming to a last minute BBQ her and her husband were planning on throwing. Obviously, Jen doesn't know me at all either. Seeing as she's a food photographer, she pretty much throws the tastiest food parties ever. We showed up to her house on Sunday only to find a whole kitchen island practically spilling over with tri-tip tacos, homemade guacamole, homemade pickles, baked beans, deviled eggs and SO MUCH MORE. When Jen cooks for you, she COOKS FOR YOU. Homegirl does not mess around.
Cheech had just started to get sick at that point, so it was nice for her to visit with her friends, roll in the grass (one of her most favorite things to do), and pick and eat strawberries straight from Jen's garden. It kind of helped get her mind off of how crappy she was feeling that morning. It was great for us, too, seeing as we get pretty stressed out when The Peach isn't feeling her best.
Anywho, the REAL reason I wrote this post is to share the recipe for the Margarita Popsicles that were, perhaps, the biggest hit of the whole event. I very reluctantly had to stop myself at just one after eating three deviled eggs before I had even gotten to the tacos. Had I made these myself at home, however, I probably would have devoured the entire batch. They were RIDONKULOUS, guys.
Frozen Margarita Pops
In a large measurring cup, mix together
- 1/2 cup of key lime juice
- 2 tsp. minced key lime zest
- 3/4 cup of water
- 7 oz. sweetened condensed milk
- 1 1/2 tbsp. of tequila
Whisk together until completely combined.
Put a pinch of kosher salt into the bottom of each frozen pop mold, and pour the liquid over the salt.
Cap with a stick and put in the freezer for six hours or until they're completely frozen.
And that's it. Super simple and SUPER yumsies.
